The powdered caviar, also called Strottarga Bianco, is the brainchild of Austrian fish farmer Walter Gruell, 51, and his son Patrick, 25. According to Patrick, Strottarga Bianco comes from the roe of albino sturgeon, an extremely rare species of fish.
To make just one kilogram of "white gold," father and son used 5 kilograms of caviar, which was dehydrated to become the final product. The pair uses sturgeon roe, which is more elegant, smooth, aromatic, and therefore has a better flavor.
Another reason for the high value of their caviar is that, while some sturgeon live for more than 100 years, some belugas don't reach this age due to a genetic defect that shortens their lifespan. Patrick also explains that the caviar they produce in Austria is among the best in the world because the water, which comes from the mountains, is free of contaminants.
"This is probably one of the reasons why the caviar tastes so good. It's also hardened before drying, a process in which the caviar loses 80 percent of its weight. Then it's grated very finely and mixed with 22-karat gold, which, in small quantities, has a very positive effect on the human immune system."
“The golden powder they create can be quickly added to a risotto, pasta, or simply sprinkled on a roll with butter. The flavor is very intense and has a distinct taste of fresh fish.” Patrick also admitted that albino caviar isn’t for everyone; however, it’s definitely a very exclusive product, especially since it’s new.
The Beluga Sturgeon
The white sturgeon (Huso huso) is a fish of the Acipenseridae family (sturgeon). It is native to the Black Sea and the Caspian Sea and their tributaries. The species is intensively fished in these areas for the harvesting of its eggs for the production of beluga caviar. They typically live in deep waters and can live for more than a hundred years.
Beluga caviar stocks have fallen by more than 90% in the last 20 years due to the destruction of spawning grounds, pollution, and the cessation of the strict fishing laws of the Soviet era.
This species is covered in bony scales that resemble armor, and can reach up to 6.5 meters in length. Sturgeons were considered the fish of kings among the Native Americans who inhabited the Great Lakes region.
